Why Chicken Breast Goes Dry
Chicken breast is very lean (~2g fat per 100g), so it has no internal fat to keep it moist during cooking. Overcooking by even 2-3 minutes turns it from tender to shoe leather.
Best Methods
1. Poaching (Best for Meal Prep)
- Bring water to boil with ginger, garlic, and salt
- Add chicken breast
- Turn OFF the heat, cover the pot
- Let sit for 20 minutes
- Result: perfectly moist chicken every time

2. Air Fryer (Fastest)
- Marinate 30 minutes minimum (kicap manis, garlic, lime juice)
- Air fry at 180°C for 18-22 minutes (depending on thickness)
- Rest 5 minutes before cutting
- Result: crispy outside, juicy inside
3. Brine Then Bake
- Soak in salt water (1 tbsp salt per litre) for 30-60 minutes
- Bake at 200°C for 20-25 minutes
- The brine forces moisture into the meat
4. Butterfly and Pan-Sear
- Cut breast horizontally to create even thickness
- Season and sear in a hot pan with minimal oil
- 3-4 minutes per side
- Faster cooking = less moisture loss

- Kari powder + yogurt - tenderises and flavours simultaneously

The Internal Temperature Rule
Chicken breast is safe at 74°C internal temperature. Many people cook to 85-90°C (shoe leather territory). Use a meat thermometer (RM15-30 on Shopee) - this single purchase will transform your chicken forever.
